Curried Sausages (diabetic friendly)


The use of spices in meat are not only for flavour but to also extend the shelf-life of a product

Curried sausages are a quick and easy mid-week meal that everyone loves. This recipe is gluten free and ideal for any family or friends who are diabetic as it has no added salt, sugar or fat (excluding content of sausages)

1 Large Fry-pan with a lid

6-8 Sausages preferably pork sausages from your local butcher
1 White onion
2 Spring onions
1 Carrot diced into rounds
1 Leek optional but a great addition during winter
1 Kumara or sweet potato optional but a great addition during winter
1 Cup minted peas
2 Tablespoons curry powder
400mL of boiling water

serves 4-6

Firstly, put the kettle on you’ll need this boiling water later. Peel and cut the Kumara into cubes and pre-cook this in the microwave. This will save on cooking time later and ensure that the Kumara is soft and silky.

Fry the sausages on a medium heat in a large fry pan until they are firm and slightly browned. Add the white onion and spring onion and fry for a further 4-6 minutes until the onions have cooked.

Sprinkle the curry powder over the sausages any supermarket brand will do just fine. Roll the sausages in the curry powder and await the aroma. Before the curry powder begins to burn add 400mL of the boiling water and let it simmer. Add diced carrot, leek and Kumara. Put the lid on the fry pan and let it boil for 8-10 minutes. Finally add the peas and simmer for a further 2 minutes.

Serve on rice or mash potato
